Brunch, Weekend of April 9, 2021
Enchiladas stuffed with chorizo, eggs and cheddar jack cheese and topped with a creamy green salsa verde sauce. Served with Southwestern skillet potatoes and cilantro lime guacamole on crisp flour tortilla chips.
Directions:
- Preheat oven to 350, place covered pan of enchiladas in oven, bake for 15 minutes, then uncover and also placet covered pan of potatoes into oven. Continue cooking both for 20-25 minutes or until well caramelized and heated through to 165 degrees.
Plating:
- Guacamole and chips can be served as an appetizer or alongside the meal.
- Enchiladas and potatoes can be divided up onto dinner plates.
