Description:
Fresh Pacific true cod on a bed on spinach with srtichoke hearts, lemon, herbs and panko breadcrumb. Served with smashed red potatoes and an appetizer of bruschetta with crostini.

Directions:
- Preheat oven to 350, place uncovered pan of cod and covered pan of potatoes in oven at the same time. Bake for 25-35 minutes until heated through and golden, 165 degrees.
- Crostini can be served straight from the bag, or heated in the oven for a minute or two, if desired.
Plating:
- Cod and potatoes can be served on a dinner plate.
- Bruschetta can be eaten as an appetizer or alongaide the meal.
