Description:
Veganized tamale pie with quinoa, "beefy" crumbles, black beans, veggies & a cornbread topping. Served with sides of green rice and a chile lime slaw.
Contents:
- 1 pan tamale pie
- 1 pan rice
- 1 container slaw
- 4 oz. dressing
Directions:
- Preheat oven to 375, once up to temp put covered pan of tamale pie into oven, bake 25 minutes. Remove cover from tamale pie and put back in oven. At the same time (after the pie has cooked for 25 minutes) put a tablespoon of water in the pan of rice, recover and add to oven. Bake both pans for an additional 25-35 minutes or until topping has set and has started browning and pie and rice are at least 165 degrees.
- Toss slaw with dressing.
Plating:
- Dish casserole and rice onto dinner plates or shallow pasta bowls.
- Serve slaw in seperate plates or bowls.
